Strawberry Lemonade Cannabis-Infused Bars


Yield: 12 bars

Prep Time: 20 minutes

Ingredients


1 cup cannabis-infused butter (softened) 

1 cup granulated sugar 

2 cups all-purpose flour 

½ teaspoon salt


For the filling

1 cup fresh strawberries, finely chopped 

3 large eggs 

1 ½ cups granulated sugar

½ cup fresh lemon juice

1 tablespoon lemon zest 

½ cup all-purpose flour 

Powdered sugar for dusting


Instructions


Start by preheating your oven to 350°F and lining a 9x13 baking dish with parchment paper. This makes it much easier to lift the bars out once they’ve cooled.


In a mixing bowl, combine the cannabis-infused butter, one cup of sugar, two cups of flour, and the salt. Mix everything together until it forms a soft dough. Press this mixture evenly into the bottom of the prepared baking dish to create the crust.


Place the crust in the oven and bake it for about 15 minutes, just until it starts to turn lightly golden. While that’s baking, you can prepare the filling.


In another bowl, whisk together the eggs, sugar, lemon juice, and lemon zest until the mixture becomes smooth and slightly frothy. Add the flour and continue whisking until everything is well combined. Fold in the chopped strawberries so they’re evenly distributed throughout the mixture.


Once the crust comes out of the oven, pour the lemon and strawberry filling directly over the warm crust and spread it evenly across the pan.


Return the baking dish to the oven and bake for another 15 minutes, or until the filling has set and the center no longer jiggles when you gently move the pan.


Allow the bars to cool completely before cutting them into squares. Once they’re cooled, dust the top lightly with powdered sugar for a finishing touch.


Serve them chilled or at room temperature, and enjoy a dessert that tastes like spring with just the right infused twist.
