Ingredients
One cup graham cracker crumbs Four tablespoons melted butter Eight ounces cream cheese, softened One cup heavy whipping cream One third cup powdered sugar One teaspoon vanilla extract One to two teaspoons infused coconut oil or infused butter, melted and measured for desired potency One cup fresh strawberries, diced Optional extra strawberries for topping
Instructions
Start by mixing the graham cracker crumbs with the melted butter in a bowl until the texture feels like damp sand. Spoon the mixture evenly into the bottom of six small jars, ramekins, or dessert cups. Press it down gently with the back of a spoon to form a crust. Set these aside while you prepare the filling.
In a separate bowl, beat the softened cream cheese until smooth and free of lumps. Take your time here, because a smooth base makes a better final texture. Add the powdered sugar and vanilla extract and mix until fully combined.
In another bowl, whip the heavy cream until soft peaks form. You want it fluffy but not stiff. Slowly fold the whipped cream into the cream cheese mixture, using gentle strokes so you do not deflate it.
Once the mixture is smooth and airy, drizzle in the melted infused oil or butter and fold it in thoroughly. Make sure the infusion is evenly distributed so each serving delivers a consistent experience.
Spoon the cheesecake filling evenly over the prepared crusts. Smooth the tops lightly, then sprinkle the diced strawberries over each cup. Cover and place the cups in the refrigerator for at least two hours to set.
